Stuffed Brinjal Curry
Gutti vankaya curry aka Stuffed Brinjal Curry is a classic and delicious Andhra style curry made with small or baby eggplants, peanuts, onions and spices.
It is nothing but stuffed baby eggplants with a special peanut masala or filling and cooked in the peanut sauce.
Gutti vankaya means “whole eggplants” and it is a way of cooking where the veggies are stuffed with spices and cooked whole.
So you will need to cook them whole without chopping them into pieces. Choose small and same sized eggplants to ensure even cooking.

Delicious North Indian Dish: Every household has their own version of making matar paneer. This is how I make it and trust me, it’s super delicious. Sometimes it is called mutter paneer where ‘matar’ or ‘mutter’ is the Hindi term for Green peas.
Our Recipe: We prefer to saute onion, tomato before grinding, it adds a depth of flavor compared to grinding raw tomatoes and onions. Caramelized onion adds a hint of sweetness that pairs well with a slight sourness of tomatoes.

Aloo Palak
This aloo palak is a healthy and nutritious side dish for your Indian bread like roti, paratha or naan. Here boiled and pan-fried potatoes are added into the vibrant, mild yet flavorful spinach gravy.

The gravy version: unlike other recipes (that you find on the internet), this aloo palak is North Indian style where vibrant green spinach gravy is made and then cooked potatoes are added.
When it says Dhaba style aloo palak, they add deep-fried potatoes to the gravy. To cut down the calories and to make it healthy, I boiled the potatoes in instant pot (pressure cooker) and then pan-fried them with little oil to get the crisp edges (just like fried potatoes have).
